How to make Pecan Granola Bars

Makes 12 Bars

Method

  • 1 ¼ cups pecan halves

  • 2 cups oats

  • 1 teaspoon ground cinnamon

  • ½ teaspoon fine sea salt

  • 1 cup of nut butter, can be pecan/ almond or peanut butter

  • ½ cup maple syrup or honey

  • 1 ½ teaspoons vanilla extract

  1. Line a baking tin with parchment paper.

  2. Set aside 16 of your pecan halves for garnish, then chop the rest.

  3. In a large mixing bowl, combine the oats, cinnamon, and salt.

  4.  Add ½ cup maple syrup to your nut butter, followed by the vanilla extract. Whisk until well blended.

  5. Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. Add the chopped pecans and mix.

  6. Transfer the mixture to the baking tin. 

  7. Garnish using the saved pecan halves.

  8. Cover the baker and refrigerate for at least one hour, or overnight.

  9. Slice into bars and enjoyyyy.
